Do you need to freshen up your life a little more and at the same time want to try something new? Or are you just in a culinary mood because you're tired of the same dishes? How about making a truly extraordinary soup that you've never had before? It is very simple, quick and consists primarily of marinated watermelon. Yes, you read that right. The combination of sweet juicy watermelon with fennel, coriander and tomatoes can conjure up an absolutely perfect dish, with which you can say goodbye to summer in style. It just can't be boring.

Ingredients needed:

  • 200 g of seedless watermelon
  • 150 g of marinated watermelon
  • 100 g of onion
  • 60 g spring onions
  • 1 pc lemon grass
  • 20 g of fresh coriander
  • 2 g ground fennel
  • 1 g of ground cumin
  • 1 g ground cardamom
  • 400 g peeled tomatoes
  • 150 g of coconut milk
  • 2 g of salt
  • 0.5 g of pepper

Marinated watermelon - how to do it?

You don't only have to marinate the meat. Watermelon is also a very serious adept at soaking up the pleasant aroma of herbs and delicious flavors that you offer it with an honest marinade. It's very simple and the result is really worth it, don't worry. Prepare 150 g of watermelon and these other ingredients:

  • 5 g of fresh coriander
  • 40 g Kikkoman soy sauce
  • 20 g of honey
  • 6 g of white sesame seeds

Marinating procedure:

  1. Cut the watermelon into cubes about one centimeter in size and pour them into a large bowl.
  2. Fry the sesame until golden in a pan. Without any fat, dry only.
  3. Pour the soy sauce, honey, coriander and sesame seeds into the bowl with the watermelon and mix everything together. You can also add salt.
  4. Let the watermelon marinate for a while like this.

You can easily marinate just before preparing the soup. Due to its structure, watermelon is very malleable and can absorb all the flavors of the marinade really quickly. In any case, you will only need it when serving, so the time during which the soup is cooked will be absolutely sufficient for marinating the watermelon.

Now it's time to prepare the soup

  1. Peel the onion and cut it into small pieces. Then put it on the hot bottom of the pot and fry it on a low heat until glassy.
  2. Tap the lemongrass with the blunt side of the knife and add it to the onion in the pot along with the chopped cilantro, finely chopped spring onion and all the spices.
  3. Saute everything slowly so that the spices are properly fragrant.
  4. Then it's time for canned peeled tomatoes and coconut milk. Add these ingredients to the mixture in the pot and let it boil for a while.
  5. Meanwhile, dice the rest of the unmarinated watermelon and add it to the boiling soup.
  6. Cook for approximately another 20 minutes.
  7. Once the soup is ready, blend it until it is completely smooth.
  8. Serve the delicious cream immediately with pieces of marinated watermelon. Garnish with fresh coriander leaves and roasted sesame seeds.

Expect a varied and interesting taste. The combination of elements of Asian cuisine with the classic watermelon, which we probably all mistakenly pigeonhole as just a "summer fruit", creates a very interesting combination.
