Origin

Kampot pepper is grown in Kampot province, located in the very south of East Asian Cambodia.

This is an area whose maritime climate and geological conditions allow local farmers to produce the highest quality pepper in the world. It is no coincidence that this pepper has been granted a protected geographical indication, similar to French champagne.

We purchase pepper from small family farms under direct trade conditions that guarantee a fair reward for each grower, and we try to promote this approach among other traders.

Characteristics

Peppers differ from each other in their taste and aroma, which you will hardly find in pepper bought in regular supermarkets.

Give a unique box containing glass tubes with three basic types of Kampot pepper, which is not without reason nicknamed the champagne of peppers . Due to its quality, it is considered the best pepper in the world and will perfectly enhance any dish. The set contains pepper for more than 400 servings of food .

Black pepper, when ground, releases notes of eucalyptus, camphor and thyme accompanied by the scent of lime peel . These gradually flow into a seaside aroma with developing fruity notes . The dominant aroma is peach and nectarine , accompanied by the scent of pine and the earthy tones of the Cambodian mountain soil full of minerals.

The rare red pepper is an explosion of fruity notes with a subtler spiciness . At first, notes of rose and rosehip dominate, which then transition into dried cherries. After two to three minutes, the more characteristic aromas of Kampot pepper begin to develop, such as citrus fruits, dried tangerines and an earthier sourdough crust.

White pepper is a gentle yet peppery caress for the taste buds. When ground, it releases aromas of camphor, sage and cedarwood , accompanied by a delicate aroma of mace, grapefruit and other citrus. After a few minutes in your mouth, you can smell notes of nutmeg, thyme and lemon balm, underpinned by the aroma of cedar and black tea.

The peppercorns come from small family farms in the Cambodian province of Kampot, where they have been grown for generations with respect for the land, nature and people. The farmers follow traditional methods that guarantee not only excellent taste but also the ethical origin of the product.

The set is also extremely environmentally friendly thanks to the use of recycled and natural materials that meet sustainable forestry certifications.

Processing

Kampot pepper is divided into three basic colors, which differ from each other in the processing of the pepper vine fruits.

In the case of black pepper, the grains are harvested while the peppercorns are still green. They are then dried in the fierce Cambodian sun, where they acquire their characteristic black color and crusty surface.

Red pepper is obtained by harvesting fully ripe peppercorns. They ripen to a deep red color and are full of fructose, which gives this type of pepper its unique flavor.

White pepper is a specialty that is obtained from fully ripe red peppercorns. These are then dried in direct sunlight and soaked again to remove the red skin, leaving only the creamy white peppercorn.

Thanks to careful selection that meets the strict quality requirements for pepper exported from Kampot , set by the Kampot Pepper Association, only the best grains are hand-picked. They are then vacuum-packed to preserve quality and freshness during the journey to the Czech Republic, where they are further selected, packaged and delivered to your table.

Use

Due to their different taste, aroma, and pungency, individual types of pepper are suitable for different purposes.

Black pepper is a universal spice that will not be lost in almost any dish. However, it is ideal to pair it with dark red meat . It will enhance any steak on the grill or in a pan, but it can also be used in classic sauces, soups and goes well with pasta .

Red pepper is the king of cold dishes thanks to its fruity character. It is suitable for vegetable salads , goes well with risotto , soups and don't be afraid to experiment with it when preparing sweet desserts or mixed drinks . Rather than with dark meat, combine it with fish or light poultry.

White pepper goes well with light meat . It perfectly enhances the taste of seafood, goes well with risotto, creamy soups and its taste is not lost even in combination with a good pasta.

The finer you grind the Kampot pepper, the more intense the pungency will be , while larger fragments or whole grains will lend more specific pepper notes to the dish.
