Kampot pepper is grown in Kampot province, located in the very south of East Asian Cambodia.

This is an area whose maritime climate and geological conditions allow local farmers to produce the highest quality pepper in the world. It is no coincidence that this pepper has been granted a protected geographical indication, similar to French champagne.
We purchase pepper from small family farms under direct trade conditions that guarantee a fair reward for each grower, and we try to promote this approach among other traders.

Characteristics

Freeze-dried green pepper brings the maximum fresh taste of green peppercorns.

In this case too, expect a peppery taste full of pungency in a very intense and rich form . The taste of green freeze-dried pepper combines fresh tones of freshly cut grass, green tea and citrus with a delicate hint of sea salt.


Processing

Freeze-dried green pepper is obtained by harvesting fragile, unripe peppercorns.

They are not traditionally sun-dried, but undergo a process called freeze-drying . During this process, the grains are dried by freezing, which removes moisture from them. The added Kampot salt keeps the grains fresh even during transport. After unpacking, all you need to do is add a drop of oil or water to restore the moisture, which the freeze-dried pepper grains will absorb back and regain their structure and flavor , as if you had just plucked them from the pepper vine.

Thanks to careful selection that meets the strict quality requirements for pepper exported from Kampot , set by the Kampot Pepper Association, only the best grains are hand-picked. They are then vacuum-packed to preserve quality and freshness during the journey to the Czech Republic, where they are further selected, packaged and delivered to your table.


Use

Freeze-dried green pepper from Kampot is the most versatile of the green peppers we offer.

Crushed it goes great with any kind of meat, dark, light, game and fish . It refreshes pasta, baked dishes with cheese and mushrooms and also sauces. It definitely won't go wrong in autumn soups, you can experiment with it in desserts and ice cream , and those with a sweet tooth can also enjoy it in combination with truffles.

It is advisable to grind this pepper in a grinder before soaking it in liquid. Do not put the soaked green freeze-dried pepper in the grinder again.


Packaging

Thanks to the materials used and the special bag sealing technology, no air or moisture reaches the pepper.
