Beef, and the preparation of real steaks in particular, is not very traditional for home cooking. So let's break this stereotype together. Trust me, you can prepare the steak, even the rib-eye. So, if you have been going to restaurants for these quality meats with seemingly complicated preparation, stop and try it at home according to our recipe. For example, you can fill in your weekend menu during which you do not have a supply of fresh boxes. You will only need a few basic ingredients. And that rib-eye steak? So it should be of proper quality, take special care in its selection.

Raw materials:

  • Beef rib-eye 300 g
  • Olive oil 20 g
  • Sea salt flakes 3 g
  • Water 1 l
  • Salt 2 g
  • Pepper 1 g
  • Egg 1x
  • Kenya green beans fresh 60 g

 Preparation procedure:

  1. Wipe the steak with a dry towel and let it sit (if it was in a vacuum).
  2. Preheat the oven to 205°C and let it warm up completely.
  3. Remove the ends of the beans, put them in boiling salted water and cook for about 3-4 minutes.
  4. Immediately after the beans are cooked, put them in ice water (this will keep them bright green).
  5. Once the beans have cooled, split them in half lengthwise and set aside. Now it's time for the steak.
  6. Sear the meat in olive oil on both sides. It only takes a few moments to make it crispy.
  7. And now it's time for the hot oven. After frying, put the steak in it to bake. About 4-5 minutes will be enough for medium rare. Add another 2 minutes for further adjustments.
  8. Remove the rib-eye steak from the oven and let it rest aside for about 6 minutes. This makes them spread out nicely and the flavors come together.
  9. Meanwhile, prepare the poached eggs in a non-stick pan with oil. Heat it slowly so that it is smooth and bubble-free after baking.
  10. Now all you have to do is stir-fry the beans, salt and pepper them to your taste.
  11. After this short procedure, you can serve the meat whole or cut into wider slices. Add eggs and beans to it, sprinkle with sea salt to taste and drizzle with olive oil.

TIP: Don't be fooled by the lack of additional spices. A quality rib-eye steak really only needs salt and pepper. The taste of a good piece of beef is really delicious and it's a shame to overload it with spices.

If you are now thinking that you would probably prefer to prepare the steak only in a pan, we definitely do not recommend it. Baking is important for the tenderness of the meat. But first, the structure of the meat needs to be pulled to retain all the juiciness, hence the combination of frying and oven. And how to avoid dirtying more dishes than necessary? Be sure to look for a pan that has a removable handle and is therefore also suitable for placing in the oven. This is not common with the cheaper classic tableware, but if you have quality kitchen equipment at home, you might be pleasantly surprised. With such a pan, you only need to do a short process - remove the handle, and you can move it and the meat into the hot oven. That way you won't get anything extra dirty. But if you don't have such a pan at home, don't worry, any baking pan will do.
