Juicy turkey burger with spring onion, zucchini and mint topped with labneh sauce
Enough of beef and indigestible burgers. It is a classic, but unfortunately, the stomach very often speaks for us and we probably all know the feeling of heaviness that often comes after ordinary burgers. However, this is definitely not a reason to resent burgers. Have you ever thought that you can make it with other meat? And that you can enrich the meat with other ingredients, such as spring onion or mint? If you've never had one, read on because we've got a great turkey burger tip for you. You read that right, ground turkey. They will surprise you.
Ingredients for the burger:
- Coarsely ground fresh turkey breast - 500 g
- Zucchini - 200 g
- Spring onion - 40 g
- Ground cumin – 1 g
- Fresh mint - 10 g
- Fresh coriander - 10 g
- Eggs, ideally homemade - 1 pc
- Salt – 3 g
- Pepper - 1 g
- Peanut oil – 500 g
Labneh Sauce Ingredients:
- Greek yogurt - 100 g
- Sour cream - 150 g
- Olive oil – 20 ml
- Salt – 3 g
- Pepper - 1 g
- Lemon juice – 25 ml
- Mashed garlic - 3 g
- Sumac (tanner's sumac, if possible) - 1 g
Preparation procedure:
First prepare the sauce. It's absolutely simple , just crush the garlic, put it together with all the mentioned ingredients in a bowl or other container, and mix with a whisk. You can, of course, add salt and pepper to taste according to your preferences (but be careful, after all the flavors have been mixed, the salt will show a little more, so be careful). Then put the sauce in the fridge, at least it will sit for a while and all the flavors will develop in it.
And how about the burger? How else but simply. Finely chop the courgette and spring onion, the mint and coriander a little coarser, and work it thoroughly with the ground turkey by hand. Beat the eggs, add the spices and mix. From the resulting mixture, shape burgers weighing about 40 g. For a perfect result, just fry the meat mixture on both sides in oil at an ideal temperature of 170 degrees Celsius.
TIP: You can easily measure the temperature of the oil and subsequently the meat itself with a kitchen thermometer, which should not be missing in any household.
Once done, serve as desired. Either you can stick to the old ways and prepare a classic burger as we are used to it, or prepare the modern trend "naked burger" . It is a great alternative for everyone who tries to keep their diet in check - the naked burger does not contain wheat flour. It's just meat and vegetables that belong to burgers anyway.
