Origin

Kampot pepper is grown in Kampot Province, located in the far south of Cambodia in Southeast Asia.

This region's coastal climate and geological conditions allow local farmers to produce pepper of the highest quality in the world. It is no coincidence that this pepper has been awarded protected geographical indication status, much like French champagne.
We buy pepper from small family farms under direct trade terms that ensure fair compensation for every grower, and we aim to promote this approach among other traders too.
When you buy from us, you get not only the highest-quality pepper, but also the assurance that you are buying a sustainable and ethically responsible product that helps provide its producers with medical care and education for their children.

Characteristics

Freeze-dried green pepper delivers the freshest possible flavor of green peppercorns.

Here too, expect a peppery flavor full of heat in a very intense and rich form. The flavor of freeze-dried green pepper combines fresh notes of freshly cut grass, green tea and citrus with a subtle hint of sea salt.

Processing

Freeze-dried green pepper is made by harvesting the delicate, still-unripe peppercorns.

Instead of being traditionally sun-dried, they undergo a process known as freeze-drying. During this process, the peppercorns are freeze-dried to remove their moisture. The Kampot salt added to them keeps the peppercorns fresh during transport. Once opened, simply restore their moisture with a drop of oil or water. The freeze-dried peppercorns will reabsorb it and regain their texture and flavor, as if freshly picked from the pepper vine.

Thanks to careful selection in line with the strict quality requirements for pepper exported from Kampot, established by the Kampot Pepper Promotion Association, only the finest peppercorns are hand-selected. They are then vacuum-packed to preserve their quality and freshness on the journey to the Czech Republic, where they are further sorted, packaged and delivered to your table.

Uses

Kampot freeze-dried green pepper is the most versatile of the green peppers we offer.

Crushed, it pairs beautifully with any meat—dark or white, game or fish. It adds freshness to pasta, baked dishes with cheese and mushrooms, as well as sauces. It also stands out in autumn soups. Try it in desserts and ice cream, or, for a truly indulgent treat, enjoy it with truffles.

This pepper is best ground in a mill before soaking in liquid. Do not put soaked freeze-dried green pepper in a mill.

Packaging

Thanks to the materials used and the special pouch-sealing technology, air and moisture are kept away from the pepper.

This allows the peppercorns to retain the authentic flavor and aroma of Kampot pepper even after the pouch has been opened. Once empty, the pouches can also be upcycled as part of a more sustainable lifestyle and reused in many different ways. We package our pepper in resealable pouches ranging in size from 20 to 1,000 grams. Each pack also includes a booklet telling the story of the world's finest pepper and introducing you to the world of .pepper..field.

Awards

Quality comes first for us, as confirmed not only by the certificates our pepper has received, but also by the awards it has won at international competitions.

Among the most notable is the award our pepper received at the Great Taste Awards, one of the most prestigious competitions in the world of gastronomy.

Sustainability is also important to us, and we see it as more than just an empty word, as demonstrated by the SDG award presented to genuinely sustainable and socially responsible projects.
