Processing

Gentle, manual work unchanged for hundreds of years—that’s how coarse sea salt is harvested.

It crystallizes on the surface of specially designed pools called salt pans, which are filled with seawater from the ocean. The water slowly evaporates under the sun and wind, and salt crystals form on its surface.

The crystals that form are harvested by hand, without any machinery, using only long wooden rakes. This keeps the salt’s structure consistent and ensures it is perfectly clean and of the highest quality.

As with Kampot pepper, the harvesting and processing of sea salt is carried out by individual small farms. Farming families pass down the tradition of making sea salt from generation to generation. That’s why the salt is completely organic, with no need for any further refining. And just as with pepper, we buy the salt directly from these farmers to ensure they are fairly rewarded for their hard work.

Uses

Thanks to how quickly it absorbs, it is ideal for all kinds of meat preparation, such as koshering.

Its excellent adherence and aesthetic appeal make it a popular choice for finishing dishes, from carpaccio to caramel or chocolate desserts.

Origin

Perfectly clean and rich in flavor and minerals—that’s the salt from the salt pans of Cambodia’s Kampot Province.

The tradition of harvesting sea salt is as deeply rooted in the region as pepper cultivation. The conditions here are ideal. Intense sunshine, ocean breezes and a mild climate made the area perfect for establishing salt pans and harvesting salt from the ocean centuries ago. The salt’s quality rivals that of sea salt from some of the most renowned regions in France and Portugal.

Packaging

Thanks to the materials used and the special sealing technology, no air or moisture can reach the salt.

We package the salt pyramids in 100g Doypack pouches. This helps the salt retain its authentic flavor and aroma, even after opening. Once empty, you can also upcycle the pouches as part of a more sustainable lifestyle and reuse them in many different ways. Awards

Quality comes first for us, as shown not only by the certifications our salt holds, but also by the awards it has won in international competitions.

Among the most significant is the award our salt received at the Great Taste Awards, one of the most prestigious competitions in the world of gastronomy.

Sustainability is also important to us, and we see it as more than just an empty promise, as demonstrated by the SDG Award given to truly sustainable and socially responsible projects.
