Processing

Fine manual work that has remained unchanged for hundreds of years is what the extraction of coarse-grained sea salt looks like.

It crystallizes on the surface of special pools called salt pans , into which ocean water is pumped and sealed. The water slowly evaporates under the influence of the sun and wind, and salt crystals form on its surface.

The resulting crystals are collected by hand , without any technical intervention, only with the help of long wooden rakes. Thanks to this, the salt structure remains consistent and the salt remains perfectly pure and of the highest quality.

Like pepper, the collection and processing of sea salt in Kampot is carried out by individual small farms . The tradition of producing sea salt is passed down from generation to generation by farmer families. The salt is therefore of completely organic quality, without the need for any subsequent refining . And just like pepper, we buy the salt directly from these farmers to ensure that they receive a fair reward for their hard work.


Use

Thanks to its fineness and structure, flower of salt is used primarily as the final touch to a prepared dish.

It certainly doesn't belong in a grinder , just crush it lightly between your fingers and apply the fragile crystals to the surface. It dissolves quickly and perfectly enhances the taste of the dish . In addition, if you apply the salt flower just before serving, it will create a wonderfully crystalline effect on the surface of the food, both on savory and sweet dishes.
