What is kombucha?
Kombucha is a fermented drink, and although the basic ingredient resembles a mushroom, it is not a mushroom in the true sense of the word. More precisely, it is a specially bred microbial culture that is responsible for the entire fermentation process.
Black tea as the basis for delicious kombucha
The basis of our kombucha is Pu-erh black tea, which has more than enough in common with kombucha. Pu-erh has its roots in the Chinese province of Yunnan, and like this fermented black tea, kombucha is nothing new in East Asia. Both are ancient drinks with impressive histories and positive benefits for the body and mind.
Unpasteurized and unfiltered
Kombucha itself is a product of many important substances and probiotic cultures. In order to preserve these substances, we do not further pasteurize or filter kombucha. This is why it can earn the RAW label and as such, kombucha needs to be stored in the refrigerator to prevent it from spoiling.
What does kombucha taste like?
Kombucha has a distinct flavor on its own. When you first taste kombucha, you may be put off by its slightly vinegary taste. However, our kombucha contains a higher content of lactic acid bacteria, which means that kombucha does not have its vinegary aftertaste. Its flavor is more delicate and pairs perfectly with lemongrass, which gives it a fresh touch.
Kombucha and digestion
Our intestines are populated by billions of bacteria and microorganisms that are essential to our health. Imagine the microbiome as a diverse community of organisms, with bacteria that harm us on one side and bacteria that help us on the other. Some foods can help us achieve a balance between these bacteria. Fermented foods such as yogurt, kimchi, or kombucha contain live microorganisms. Since kombucha is a product of fermentation, a number of probiotic strains are created that are important for a balanced intestinal microbiome. Thanks to the fermentation process, kombucha is rich in probiotic strains, mainly from the saccharomyces family.
When should you enjoy kombucha?
Kombucha contains a colony of bacteria and yeast, which, when mixed with sugar, are responsible for starting the fermentation process. Thanks to this, it is rich not only in probiotic strains, but also in enzymes. Therefore, kombucha is an excellent drink after a meal, as it supports digestion and minimizes feelings of a heavy stomach. We recommend opening kombucha when chilled, otherwise it may foam.
