Thanks to its neutral taste and delicate consistency, avocado can adapt to almost any dish if handled correctly. However, it is necessary to pay attention to its maturity . The avocado must not be hard, but not too overripe. Its pulp color should be deep green-yellow and the consistency should be buttery. If the flesh is brown, it is overripe. Choosing this fruit in the store is sometimes a bit of a science and you may have to reach to the side a few times at first. But the essential information is that its nutritional values ​​are absolutely excellent . The pudding contains many nuts, which carry a lot of healthy fats with them, and together with the avocado, they form a truly perfect combination. Homemade rice and cashew milk also guarantees that the resulting pudding will not contain any stabilizers or other additives that appear in purchased vegan drinks.

What will you need?

For cashew milk:

  • 100 g of basmati rice
  • 450 g of water
  • 70 g of cashew nuts
  • Vanilla pod (seeds)

For the pudding:

  • 150 g of avocado
  • 150 g of cashew milk
  • 75 g of maple syrup
  • 15 g of raw cocoa powder
  • Vanilla pod (seeds)
  • 5 g of ground cinnamon
  • A pinch of salt
  • 20 g of walnuts
  • 10 g pine nuts (seeds)
  • Mint leaves

How to proceed?

First prepare the milk. Boil the rice in water with vanilla seeds. Then put this in a blender with cashew nuts and blend to a paste. This is how you get cashew paste. Let it cool and then start preparing the pudding.

Pudding is very easy to prepare. Just put all the mentioned ingredients except nuts and mint into a blender and blend until smooth and fluffy. Then divide the resulting cocoa pudding into glasses.
